INGREDIENTS 2 Cups - Water 4 Tbsp - Olive Oil 2 Tbsp - Minced Garlic 4 Cups - Beef Chunks 2 Cups - Beef Broth 1 Tsp - Salt 1 Tsp - Black Pepper 1/2 Tsp - Rosemary 1 Whole - Bay Leaf 5 Tbsp - All Purpose Flour 2 Tbsp - Sugar 1 Tbsp - Tomato Paste 3 Tbsp - Worcestershire Sauce 3 Cups - Chopped Onions 3 Cups - Carrots (1 inch cuts) 3 Cups - Potatoes (we used red potatoes and cut them in half for quicker cooking) INSTRUCTIONS 1. Add olive oil to the pot and put a layer of the beef chunks into the pan. Don't overcrowd the pan or the meat will just sweat--you want the meat to have a good pan searing. 2. Remove the beef chunks and set aside. In the same pot, add some more olive oil, onions, garlic, and carrots. Cook until the edges of the onions start to turn golden. 3.   Sweet chicken feet is a childhood favorite and one dish that was a crowd favorite. It was a dish, a pork version, that was highly requested of our mom during gatherings. The sweet chicken flesh is full of collagen, which is great for the skin, and it comes off the bone so easily. If you feel like this is a take on sweet pork, then you're right. It's sweet pork, but with chicken feet. EASY EGG DROP SOUP

  INGREDIENTS 3 Whole - Eggs 3 Tbsp - Corn Starch 4-5 Whole - Wood-ear Mushrooms (julienned)  3-4 Whole - Shitake Mushrooms (julienned) 1/2 Cup - Carrots (julienned) 1 Stalk - Green Onions (julienned or chopped) 3 Tbsp - Soy Sauce 1 Tbsp - Chicken Boullion 2 Tbsp - Ginger (julienned) 1 tsp - Salt (or to taste) Instructions 1. In a pot of boiling water, add the mushrooms and chicken boullion. Allow the mushroom to cook for a minute or two on medium high heat, then add in the carrots and salt (to taste). 2. When the carrots are almost fully cooked, add in ginger and soy sauce. Cook for a minute or two. 3. Slowly add the corn starch slurry. At this point, continuously stir the soup as it thickens. 4. Then add in the eggs slowly while stirring. Allow the soup to simmer for 30 seconds to a minute to allow the eggs to fully cook.  5. Add the green onions and serve with rice no the side. VIDEO

PORK TOMATO ON RICE

  INGREDIENTS 1 Tbsp - Minced Garlic 3 Cups - Diced Tomatoes 1 Cup - Diced Onions 1/2 Cup - Chopped Cilantro 1/3 Cup - Chopped Green Onions 1 Pound - Ground Pork 1 Tsp - Salt (or to taste) 2 Tbsp - Light Soy Sauce ( https://amzn.to/3QylBhy ) 1 Tbsp - Oyster Sauce ( 1 Tbsp - Oyster Sauce ( https://amzn.to/3xIRL1n ) 1 Tsp - Black Pepper (or to taste) 1 Tbsp - Sriracha (or to taste) 1 Bunch - Basil (remove stems if desired) INSTRUCTIONS 1. In some cooking oil and medium high heat, cook the minced garlic and onion until begins to brown. 2. Add the ground pork, salt, and black pepper. Stir well. Occasionally stir until pork is fully cooked.  3. Add in the tomatoes, oyster sauce, soy sauce, and sriracha. Mix well and allow the tomatoes cook down. Turn down the heat to medium or medium-low to stir occasionally to allow the tomatoes to slowly cook and incorporate into the rest of the ingredients. Each come full of flavor and the variety will feed even the pickiest of eaters (OK, our little picky eater only ate the fries and shrimp patty on the bun). BACON GREEN BEAN STIR FRY

This simple dish is something thrown together last minute for dinner. It is savory and incredibly delicious. Like any stir fry, you can substitute anything in the ingredients.  INGREDIENTS 1 Pound - Bacon 1 Whole - Kielbasa 3 Cup - Chopped Carrots 3 Cup - Green Beans (Chopped Optional) 1 Whole - Sliced Red Onion 1 Tsp - Salt 2 Tsp - Black Pepper 3 Tbsp - Oyster Sauce 3 Tbsp - Soy Sauce 1 Tsp - Onion Powder 1 Tsp - Garlic Powder 3 Tbsp - Sambal  INSTRUCTIONS 1. After chopping your ingredients to desired size, add the bacon, salt, black pepper, onion powder, and garlic powder to a non-stick pan and cook on medium high.  2. If you've had papaya salad before, this image will surely make your mouth water. The flavors are intense but so very addicting. Who likes their salad spicy? INGREDIENTS 1 Cup - Peanuts 1 Whole - Green Papaya 5 Whole - Roma Tomatoes 2 Tsp - MSG 1 Tbsp - Salt 4 Tbsp - Fish Sauce 2 Tsp - Shrimp Paste 2 Tsp - Crab Paste 4 Whole - Thai Pepper 4 Cloves - Garlic 1 Whole - Lime 6-8 Tbsp - Cane Sugar INSTRUCTIONS 1. Carefully peel off the papaya skin then cut the papaya lengthwise. Take out the seeds. 2. Julienne the papaya. We used a mandolin.  3. In the mortar, add in the thai pepper, garlic, shrimp paste, and crab paste, then pound together. The design of the clay mortar requires you to just pound and occasionally stir the contents with a spoon—no need to twist/grind the ingredients. 4.   In our home, pho is made once and enjoyed for 2 or 3 days. That’s probably why it takes 3 hours minimum to make. Pho is a comfort food for many in our household and between the fresh herbs and the yummy broth, no other soup can compare. Pho is very versatile–you can substitute ingredients like we did with our recipe but note that as you replace ingredients that authentic flavor will also be altered. For example, we opted-out of the thin sliced beef today because our local shop didn’t have any. Our substitute, Beef Shank, was just as tasty but it’s not as authentic.
