SUMMER PLUM CRUMB TART

We have two beautiful plum trees in our yard which are extra productive this year. The plums were juicy yet the squirrels left them alone. Usually the squirrels get to these before we do, but this year the squirrels must've found better fruit in someone else's yard.  INGREDIENTS 2 Cups - Almond Flour 1/2 Cup - All Purpose Flour 1/2 Cup - Brown Sugar 1 Cup - Chopped Pecans 1.2 Cup - Sugar 4 Tbsp - Cornstarch 1 - Egg 1 Tsp - Salt 2 Sticks - Butter (cubed) 5 Cups - Plums (pitted and skinned, if desired) INSTRUCTIONS 1. Mix the almond flour, all purpose flour, brown sugar, chipped pecans, egg, and butter until well combined. If there are chunks of butter still in the dough, that is ok as long as most of the butter has been incorporated.  2. Split the dough into thirds. Use 2/3rds of it to fill the tart or pie pan. MOM KIA'S SWEET CHICKEN FEET

  Sweet chicken feet is a childhood favorite and one dish that was a crowd favorite. It was a dish, a pork version, that was highly requested of our mom during gatherings. The sweet chicken flesh is full of collagen, which is great for the skin, and it comes off the bone so easily. If you feel like this is a take on sweet pork, then you're right. It's sweet pork, but with chicken feet. Trust me, it's so good.  INGREDIENTS 3 Pounds - Chicken Feet 1 Can - Coconut Milk (16 oz) split into two  (https://amzn.to/3aV5nPt) 4 Cloves - Garlic 2 Stalks - Lemongrass 1 Tsp - Salt (or to taste) 1/4 Cup - Sweet Soy Sauce (https://amzn.to/3RUMUmG) 1 Dozen - Hardboiled Eggs (egg shells removed) 2.5 oz - Char Siu Powder (https://amzn.to/3OvSRnk) 4 Whole - Star Anise INSTRUCTIONS 1. In a pot of boiling water, boil the chicken feet. The water should be at a rolling boil and the chicken feet should be fully submerged. Boil the chicken feet until tender--this may take 1-2 hours. STRAWBERRY MANGO PUFF PASTRY

  These layered puff pastries are a take on the beloved Canadian Flakies. The flaky pastry goes so well with whipped cream and the fruits brings it all together. This treat can be made sweeter or less sweet (like our recipe) to make the pickiest eater happy. The puff pastry and whipped cream is a great base to serve up with your favorite fruits. Check out our substitution section for more ideas.  INGREDIENTS 1 Sheet - Puff Pastry (or 17.25 oz) 2 Cup - Heavy Whipping Cream 1/2 Cup - Powdered Sugar 1 - Mango (cubed) 3 Cups - Strawberries (cubed or sliced) 1/2 Cup - Sweetened Condensed Milk 1/2 Cup - Water INSTRUCTIONS 1. Cut your puff pastry sheet into desired shape. We cut ours into rectangles about 2 inches tall and 3 inches wide.  2. Place them on a parchment lined baking sheet and bake in the middle rack until golden brown. The bottom of the pastry might cook faster, so pay attention to the bottom so that it doesn't burn before the top of golden. Once baked, remove from oven and

JALAPENO POPPER MAC-N-CHEESE

  INGREDIENTS 16 oz - Macaroni (We used Ziti because it has more bite to it) 3 Cloves - Garlic 16 oz - Cheddar Cheese 8 oz - Parmesan Cheese 10 oz - Gouda Cheese 8 oz - Mozzarella Cheese Salt and Black Pepper To Taste 4 Tbsp - Flour 16 oz - Bacon 5 Whole - Jalapenos 1.5 Cup - Milk 4 Tbsp - Butter 2 - 3 Oz - Cream Cheese 1 Tbsp - red Pepper Flakes 1 Cup - Panko INSTRUCTIONS 1. In a large pot of boiling water, cook the pasta until desired doneness. 2. Shred the cheese. We used a mandoline, but that took too long, so we ended up just chopping it by hand into cubes.  3. Prepare the jalapeno poppers. Cut the stem off the jalapenos and then carefully slice them the long way. Remove the seeds and then fill it with cream cheese. Cut the bacon in half and wrap the jalapeno. Save one half of a jalapeno for the sauce.  4. Cook the jalapeno poppers in the oven (or air fryer) at 350 for about 5-8 minutes, or until 90% cooked.  5. Chop the saved jalapeno half, garlic, and bacon into small pieces.  6

CLASSIC RED, WHITE, AND BLUE SALAD

  This colorful and sweet salad is perfect for entertaining, especially for those who live in the States and celebrate Independence Day on July 4th. Keep the base and switch out the colors to make it specific to your special occasion. Suggestions later in the post.  Ingredients 1 large bowl - Salad Greens  1 Cup - Strawberries (sliced) 1 Cup - Blue Berries  1 Cup - Cucumbers (sliced) 1 Cup - Pecans Dressing Ingredients* 1/2 Cup - Olive Oil (https://amzn.to/3OOgNDp) Juice of half a orange 4 Tbsp - Vinegar (https://amzn.to/3OHQgaY) 4 Tbsp - Honey (https://amzn.to/3R9PEws) *If you are able to, buy local. This brand is local to Tulsa, OK, where we live. Visit your local farmers market or local grocery store that carries local honey.  2 Tbsp - Dijon Mustard (https://amzn.to/3aglabs) 4 Tbsp - Poppyseeds (https://amzn.to/3bT55ZP) Instructions 1. Add all the dressing ingredients (except the poppyseeds) into a blender. Blend until all combined. Add more honey a tablespoon at a time to increase
