STRAWBERRY MANGO PUFF PASTRY

 


These layered puff pastries are a take on the beloved Canadian Flakies. The flaky pastry goes so well with whipped cream and the fruits brings it all together. This treat can be made sweeter or less sweet (like our recipe) to make the pickiest eater happy. The puff pastry and whipped cream is a great base to serve up with your favorite fruits. Check out our substitution section for more ideas. 


INGREDIENTS

1 Sheet - Puff Pastry (or 17.25 oz)

2 Cup - Heavy Whipping Cream

1/2 Cup - Powdered Sugar

1 - Mango (cubed)

3 Cups - Strawberries (cubed or sliced)

1/2 Cup - Sweetened Condensed Milk

1/2 Cup - Water


INSTRUCTIONS

1. Cut your puff pastry sheet into desired shape. We cut ours into rectangles about 2 inches tall and 3 inches wide. 

2. Place them on a parchment lined baking sheet and bake in the middle rack until golden brown. The bottom of the pastry might cook faster, so pay attention to the bottom so that it doesn't burn before the top of golden. Once baked, remove from oven and allow to completely cool down. 

3. While the pastries are baking, prepare your fruits and heavy whipping cream. 

4.  Take some of the cubed mango, and cook them with a tablespoon or two of the powdered sugar and add water about 3 tablespoon at a time until the mango filling is soft and the liquid is thick like a jam. 

5. To make the heavy whipping cream, put the heavy whipping cream in a large bowl and use a hand mixer (or you can whisk by hand or using a stand mixer) to whip the ingredients together until the cream is stable and able to hold its shape.

6. Once the mango filling and puff pastry is cooled, you can assemble your dessert. We like to cut the pastry in half, fill it with strawberry, whipped cream, and the mango filling. Place the top half on and then top it off with the whipped cream and fresh fruit. Assembly is not required, you can throw them all into a bowl and just enjoy!

SUBSTITUTIONS

For a keto version, you can use keto confectioners sugar as the sweetener. Stick to berries or other keto-friendly fruits for that pop of color and flavor. The puff pastry is full of carbs, so I would recommend using a layer of keto cookies like these: Hikey Vanilla Wafers (https://amzn.to/3zhrcSM). Or if you like the

  • Grapes
  • Muesli 
  • M&Ms

The options are endless. 

TIPS

  • For extra flair, you can add a little mint leaf on top to make the colors pop out more. Doesn't have to be a mint leaf, it can be anything you want. A mint leaf is just the traditional green topping for desserts. You can use a rosemary sprig or cilantro if you must, but these options are not as well liked as the mint. 
  • Need to assemble these fast? Be sure to wait until they are all cooled, otherwise the whipped cream will melt and you will have a hot mess on your hands. The assembly process can be quickened if you do everything in an assembly style: cut all of the pastry puffs, then put whipped cream on all of the pastries, then add fruit, etc. The transitions are the most time consuming part of assembling food.  
  • To save more time, buy the frozen puff pastry packs from the store. This will save you so much time. You're sacrificing that homemade puff pastry taste, but if you're a terrible dough maker like me, you're safe with the store-bought stuff.
