MASHED POTATOES THAT ARE 10 OUT OF 10! - EASY AIRFRYER RECIPE FOR CREAMY AND CHEESY DELICIOUSNESS.

Image
Our picky eater approves this recipe. It's creamy and cheesy and single serve. The crispy exterior is a nice contrast to the roughly mashed potatoes inside. Of course the seasonings can be altered to fit anyone's taste. NOTE: Our recipe calls for the mash to be frozen overnight, or at least 4 hours. Make this the day before you plan to serve for best results. :) INGREDIENTS 7-8 Whole - Yukon Potatoes (peeled and chopped to 2-3 inch thickness) 1 Stick - Unsalted Butter 1/2 Cup - Heavy Cream 1/2 Tsp - Salt 1/2 Tsp - Black Pepper () 1 Tsp - Garlic Powder 1 Tsp - Parsley 2 Cup - Cheese (we used a taco mix) INSTRUCTIONS 1. Boil the potatoes until a fork can effortlessly break the pieces in half. 2. Strain out all of the water from the potatoes. 3. While the potatoes are still hot, roughly mash the potatoes then add the butter, heavy cream, salt, pepper, garlic powder, parsley, and cheese. Mix until combined and to your desired mash-ness (Did we just create a new word?). We like text...

CRISPY FRIED SHRIMP & JALAPENOS WITH ONLY 6 INGREDIENTS - EASY POTLUCK RECIPE (KETO FRIENDLY)

This recipe is simple, customizable, and quick to make. You'll only need 6 ingredients (or three if you exclude seasoning). Here's the recipe and we hope you'll enjoy it as much as we enjoyed filming/eating them! INGREDIENTS 3 lbs - Uncooked Shrimp (we like the ones with the heads attached) 1 whole - Jalapeno (excluding the stem) 4 Cups - Flour 1 Tbsp - Salt 1/2 Tbsp - Black Pepper 1/2 Tbsp - Smoked Paprika 2 Gallon - Frying Oil (OK, 7 ingredients if you count the oil) INSTRUCTIONS 1. Pre-heat the frying oil to medium-high or high heat. 2. Mix the flour, salt, black pepper, and paprika. 3. When the oil is hot enough (skewer or bamboo chopstick will bubble when dipped in the oil), thoroughly coat the shrimp in the flour mixture, shake off excess flour, and gently drop them into the oil. Don’t put too many, just one layer of shrimp will do. Cook the shrimp until the shrimp is thoroughly cooked through but not over cooked. The shrimp will turn red when you cook them, and you...

BLOODY BRULEE CRONUT

Image
These cuties are so easy to make. The recipe is very simple. There are only 4 ingredients (and water which is optional). You could do without the blue food coloring, but that makes the blood look darker and more convincing. INGREDIENTS: 2 Sheets (17 oz) - Puff Pastry 2 Cups - Sugar 1 Drop - Blue Food Coloring 8-10 Drops - Red Food Coloring 1 Gallon - Frying Oil INSTRUCTIONS 1. Spread out the puff pastry sheets--one on top of the other. If the puff pastry doesn't stick together well, you can brush some water between the sheets to help it adhere better. 2. Use a cookie cutter or a knife to cut desired shapes. We used a bottle cap to cut 2 inch circles. If you use a knife, you can make them squares (about 2 inches on each side). 3. Fry the dough in the oil until golden brown. They will puff up a bit. To help them along you can carefully help submerge them. 4. Remove from oil when they're fully cooked and place on a wire rack to cool and allow excess oil to drain. 5. I...

UBE PUMPKIN BREAD (HALLOWEEN CHARCUTERIE SERIES)

Image
The vibrant ube color goes great with the traditional pumpkin color. Our recipe starts with the creation of one batter and split into two, and the measurements sort of start to be intuitive. It's hard to mess up as the batter in these are more runny than others and overworking the dough is unlikely. INGREDIENTS 5 Tbsp - Ube Condensed Creamer (https://amzn.to/3TbVxJJ) 2 Cup - Flour 1/4 Cup - Milk 1 Tbsp - Pumpkin Spice (https://amzn.to/3ECzGXw) 1/2 Cup - Sugar (https://amzn.to/3Co1V9V) 1 Stick - Butter 1 Tsp - Vanilla Extract (https://amzn.to/3rINZlV) 1 Cup - Pumpkin Puree (aka canned pumpkin) 1/3 Tsp - Salt (https://amzn.to/3ekufSA) 2 - Eggs 1/2 Tsp - Baking Powder (https://amzn.to/3T7gQfb) 1/2 Tsp - Baking Soda (https://amzn.to/3TbGtLQ) INSTRUCTIONS 1. Mix flour, sugar, baking soda, baking powder, and salt together. This is our dry ingredients. Note: Usually, you'll beat the sugar in with the butter and wet ingredients, which should work in this recipe too, but to ease we just...

FAMILY FAVORITE SHEPHERD'S PIE

Image
One of the best school lunch was shepherd's pie. It's hearty, easy to eat, and you could count more than 3 ingredients in it. Growing up, our exposure to American food was at school. Wishing we had parents who cooked towers of pancakes at the table as we rushed out the door to school, but realizing now that the cup noodles for breakfast was probably more nutritious.  DID YOU KNOW? Shepherd's pie is actually made with sheep (or mutton). Our recipe is made with beef, which technically should be called cottage pie. Also, way back the pie was likely made using leftover meat.  INGREDIENTS Meat Mixture: 1 lb - Ground Beef  1 Cup - Chopped Onions 3 cloves - Garlic (Minced) 12 oz - Corn (we used frozen) 12 oz - Carrots and Peas (also frozen) 2 Tbsp - Tomato Paste (if you read this fast like me, you probably read toothpaste; don't use toothpaste). 2 Tbsp - Flour  2 Tbsp - Worcestershire Sauce  (https://amzn.to/3zyJTQK) 3 Tbsp - Olive Oil (https://amzn.to/3z...

SUMMER PLUM CRUMB TART

Image
We have two beautiful plum trees in our yard which are extra productive this year. The plums were juicy yet the squirrels left them alone. Usually the squirrels get to these before we do, but this year the squirrels must've found better fruit in someone else's yard.  INGREDIENTS 2 Cups - Almond Flour 1/2 Cup - All Purpose Flour 1/2 Cup - Brown Sugar 1 Cup - Chopped Pecans 1.2 Cup - Sugar 4 Tbsp - Cornstarch 1 - Egg 1 Tsp - Salt 2 Sticks - Butter (cubed) 5 Cups - Plums (pitted and skinned, if desired) INSTRUCTIONS 1. Mix the almond flour, all purpose flour, brown sugar, chipped pecans, egg, and butter until well combined. If there are chunks of butter still in the dough, that is ok as long as most of the butter has been incorporated.  2. Split the dough into thirds. Use 2/3rds of it to fill the tart or pie pan. Try to make the side and the bottom crust the same thickness. Crimp the edges down so that they are even--this will prevent burning in the oven. Chill the crust in the f...

MOM KIA'S SWEET CHICKEN FEET

Image
Sweet chicken feet is a childhood favorite and one dish that was a crowd favorite. It was a dish, a pork version, that was highly requested of our mom during gatherings. The sweet chicken flesh is full of collagen, which is great for the skin, and it comes off the bone so easily. If you feel like this is a take on sweet pork, then you're right. It's sweet pork, but with chicken feet. Trust me, it's so good.  INGREDIENTS 3 Pounds - Chicken Feet 1 Can - Coconut Milk (16 oz) split into two  (https://amzn.to/3aV5nPt) 4 Cloves - Garlic 2 Stalks - Lemongrass 1 Tsp - Salt (or to taste) 1/4 Cup - Sweet Soy Sauce (https://amzn.to/3RUMUmG) 1 Dozen - Hardboiled Eggs (egg shells removed) 2.5 oz - Char Siu Powder (https://amzn.to/3OvSRnk) 4 Whole - Star Anise INSTRUCTIONS 1. In a pot of boiling water, boil the chicken feet. The water should be at a rolling boil and the chicken feet should be fully submerged. Boil the chicken feet until tender--this may take 1-2 hours. Keep a close e...

STRAWBERRY MANGO PUFF PASTRY

Image
These layered puff pastries are a take on the beloved Canadian Flakies. The flaky pastry goes so well with whipped cream and the fruits brings it all together. This treat can be made sweeter or less sweet (like our recipe) to make the pickiest eater happy. The puff pastry and whipped cream is a great base to serve up with your favorite fruits. Check out our substitution section for more ideas.  INGREDIENTS 1 Sheet - Puff Pastry (or 17.25 oz) 2 Cup - Heavy Whipping Cream 1/2 Cup - Powdered Sugar 1 - Mango (cubed) 3 Cups - Strawberries (cubed or sliced) 1/2 Cup - Sweetened Condensed Milk 1/2 Cup - Water INSTRUCTIONS 1. Cut your puff pastry sheet into desired shape. We cut ours into rectangles about 2 inches tall and 3 inches wide.  2. Place them on a parchment lined baking sheet and bake in the middle rack until golden brown. The bottom of the pastry might cook faster, so pay attention to the bottom so that it doesn't burn before the top of golden. Once baked, remove from...

Cut the bacon in half and wrap the jalapeno. Save one half of a jalapeno for the sauce.  4. Cook the jalapeno poppers in the oven (or air fryer) at 350 for about 5-8 minutes, or until 90% cooked.  5. EASY CHICKEN QUESADILLA

INGREDIENTS 1 Pack - Tortilla Wraps  1 Pack - Grilled Chicken Breast 2 Whole - Avocados (sliced or cubed) 1 Pack - Mozzarella Cheese (shredded) INSTRUCTIONS 1. Heat a skillet on medium low, add the tortilla and warm it up on both sides.  2. Once warm, add the cheese and allow it to melt slightly. If desired, place a lid on the skillet to concentrate heat on the food and help the cheese melt faster. 3. When the cheese is almost melted fully, add the chicken and avocado to one half of the wrap. 4. Fold over the wrap by folding over the side with only cheese. Keeping the side with chicken and avocado down will minimize the mess.  5. Cut into desired size and serve with homemade salsa and sour cream on the side.  VIDEO Thank you for your support!
