SLIDER FLIGHTS - SOFTSHELL CRAB, PEPPER BOMB, AND SHRIMP & HERB

This slider flight is shareable, but you might not want to share it. Each come full of flavor and the variety will feed even the pickiest of eaters (OK, our little picky eater only ate the fries and shrimp patty on the bun). But the best thing is that you can have all of the ingredients on a buffet line and allow your family/guests to assemble their own burger. OVERNIGHT PICKLES

  INGREDIENTS  1 Cup - Distilled Water 1 Cup - Distilled White Vinegar 2 Tbsp - Cane Sugar 1 Tsp - Salt 2 Tsp - Red Pepper Flakes 8 Sprigs - Fresh Dill 1 Tsp - Coriander Seeds 1 Tsp - Black Peppercorns 1 Tsp - Ground Mustard Seeds  2 Cloves - Garlic  INSTRUCTIONS 1. Place the water, vinegar, salt, and sugar into a pot and heat until the salt and sugar are dissolved.  2. Cut the garlic cloves and cucumber to desired size. 3. Layer the cucumber, garlic, red pepper flakes, coriander seeds, black peppercorns, and ground mustard seeds into a clean and sanitized jar (we steamed our jar and lids before using). Top it off with the dill. 4. Ladle the vinegar mixture into the jar until fully covered. You may need to use a sanitized spoon to move the contents to release any air bubbles.  5. RAINBOW CABBAGE SALAD

  This recipe is inspired by Camila Alves McConaughey's No Mayo Coleslaw. It's so good. But we had to make some changes to fit the taste of our family. The colorful vegetables are a medley of texture and flavor. It's sweet yet fibrous and healthy too.  INGREDIENTS 1 Whole (small) - Shredded Red Cabbage 1 Whole (small) - Shredded Cabbage 2 Whole - Julienned Carrots 3 Whole - Julienned Honeycrisp Apples  2 Whole - Julienned Pears 1/2 Cup - Thinly Cut Fresh Mint 1 Whole - Lemon Juice (to taste) 4 Tbsp - Apple Cider Vinegar ( https://amzn.to/3Gi0lb3 ) 1 Tbsp - Kosher Salt ( https://amzn.to/3wKj0b7 ) 1 Tbsp - Freshly Ground Black Pepper (our grinder: https://amzn.to/3PG77f6 ) 3 Tbsp - Olive Oil ( https://amzn.to/3wJnaBm or https://amzn.to/3Ge5GAl ) INSTRUCTIONS 1. Put all of the ingredients except the mint into a bowl.  Squeeze the lemon juice to taste (use a strainer to keep seeds out of the salad).  2. Mix everything well. Then add the mint and mix again. 3. BACON GREEN BEAN STIR FRY

This simple dish is something thrown together last minute for dinner. It is savory and incredibly delicious. Like any stir fry, you can substitute anything in the ingredients.  INGREDIENTS 1 Pound - Bacon 1 Whole - Kielbasa 3 Cup - Chopped Carrots 3 Cup - Green Beans (Chopped Optional) 1 Whole - Sliced Red Onion 1 Tsp - Salt 2 Tsp - Black Pepper 3 Tbsp - Oyster Sauce 3 Tbsp - Soy Sauce 1 Tsp - Onion Powder 1 Tsp - Garlic Powder 3 Tbsp - Sambal  INSTRUCTIONS 1. After chopping your ingredients to desired size, add the bacon, salt, black pepper, onion powder, and garlic powder to a non-stick pan and cook on medium high.  2. Once a few of the bacon edges start to crisp, add in the keilbasa and cook until the all the bacon pieces have some crisp edges.  3.  Add in the red onions and cook until they begin to wilt.  4. Add the green beans, carrots, oyster sauce, soy sauce, and sambal, then stir occasionally until the carrots and green beans are to desire consistency.  5. Serve with rice.  Tha

PAPAYA SALAD

If you've had papaya salad before, this image will surely make your mouth water. The flavors are intense but so very addicting. Who likes their salad spicy? INGREDIENTS 1 Cup - Peanuts 1 Whole - Green Papaya 5 Whole - Roma Tomatoes 2 Tsp - MSG 1 Tbsp - Salt 4 Tbsp - Fish Sauce 2 Tsp - Shrimp Paste 2 Tsp - Crab Paste 4 Whole - Thai Pepper 4 Cloves - Garlic 1 Whole - Lime 6-8 Tbsp - Cane Sugar INSTRUCTIONS 1. Carefully peel off the papaya skin then cut the papaya lengthwise. Take out the seeds. 2. Julienne the papaya. We used a mandolin.  3. In the mortar, add in the thai pepper, garlic, shrimp paste, and crab paste, then pound together. The design of the clay mortar requires you to just pound and occasionally stir the contents with a spoon—no need to twist/grind the ingredients. 4. PHO: BEEF RICE NOODLE SOUP FOR DAYS!

  In our home, pho is made once and enjoyed for 2 or 3 days. That’s probably why it takes 3 hours minimum to make. Pho is a comfort food for many in our household and between the fresh herbs and the yummy broth, no other soup can compare. Pho is very versatile–you can substitute ingredients like we did with our recipe but note that as you replace ingredients that authentic flavor will also be altered. For example, we opted-out of the thin sliced beef today because our local shop didn’t have any. Our substitute, Beef Shank, was just as tasty but it’s not as authentic. CAJUN GARLIC BUTTER CRAWFISH BOIL

 Crawfish season is here! We love our crawfish boil and our recipe improves every year. This year's ingredients include citrus in two different forms--lemon pepper and lemongrass. Of course the lemons are served on the side in our lemonade ice tea. The garlicky butter is just spicy enough to give a small kick. As always, with from-scratch recipes, it's always up to the chef's discretion whether or not to add a little more spice. INGREDIENTS 4 pounds - Live Crawfish 2 Ears - Corn 1 - Keilbasa 6-10 - Medium Potatoes 1 Cup - Cajun Mix 2 Tbsp - Chicken Boullion 3 Tbsp - Old Bay Seasoning 1 Tbsp - Oregano 1/2 Cup - Minced Garlic 2 pounds - Butter 1 Tbsp - Cayenne  1 Tbsp - Lemon Pepper 1 Tbsp - Onion Powder 2 Tbsp - Paprika 1.2 Cup - Minced Onion 2 Tbsp - Minced Lemongrass Stalk INSTRUCTIONS 1. AIR FRYER SWEET POTATO FRIES

INGREDIENTS 2 – Sweet Potatoes 2 Tbsp – Cooking Oil 1 Tsp – Garlic Powder 1 Tsp – Salt INSTRUCTIONS 1. Peel the skin off the sweet potatoes. 2. Carefully cut the potatoes lengthwise into approximately ½ inch thick slices. Cut the slices again into ½ think sticks. 3. Place the potato sticks into a bowl then add cooking oil, salt, and garlic powder. 4. Cook the potato sticks in the air fryer for 10 minutes at 400° F. 5. BEEF TENDON SOUP

  INGREDIENTS 32 oz – Beef Chunks (Cut into Bite-Size Pieces) 40 oz – Beef Tendon 16 oz – Beef Tripe 8 oz – Enoki Mushroom 8 oz- Wood Ear Mushroom 8 oz- Beech Mushroom 4-5 - Kaffir Leaves 2 – Shallots (Diced) 2- Lemongrass Stalks (Cut 6 Inches) 3 - Green Onions (Thinly Sliced) 4-5 Cloves - Garlic (Minced) 3-4 - Ginger (Sliced) 1 Handful - Basil Leaves 1 Tbsp – Fish Sauce 1 Tbsp – Light Soy Sauce 1 1/2 Tbsp – Oyster Sauce ½ Tsp - Salt (more to taste) 1 Tsp - Ground Black Pepper INSTRUCTIONS 1. Boil beef tendon for 4-5 hours or until desired tenderness then into bite-sized pieces. 2. In a nonstick pot, heat 2 Tbsp of cooking oil then saute lemongrass, ginger, shallots, kaffir lime leaves, and garlic till slightly brown. 3. Add beef chunks, salt, black pepper, half of the light soy sauce, and cook for 5 minutes. 4. Add beef tendon and tripe. 5. Add water until the meat is almost submerged in water. 6. INGREDIENTS 40 – Mini Hot Dogs 1 Sheet – Puff Pastry 1 – Egg 1-2 Tbsp - Sesame Seeds (Garnish) INSTRUCTIONS 1. Lay the puff pastry flat and cut into 40 squares. 2. Put the hot dog diagonally onto the puff pastry square. 3. Fold the corners of the puff pastry around the hot dog. Press down gently on the puff pastry so that the corners adhere to each other around the hot dog. 4. Crack the egg into a bowl and mix until combined. 5. Brush the egg onto the top of the wrapped hot dogs. 6. While the egg wash is still wet, sprinkle the sesame seeds on top. 7.   INGREDIENTS 6-8 - Chicken Wings ¼ Cup - Fish Sauce 5 Tbsp - Honey (KETO Substitute: Sugar-free maple syrup) 2 Tbsp - Sriracha 1 Tbsp - Soy Sauce 1 Tbsp - Lime Juice ½ tsp - Black Pepper Pinch of salt INSTRUCTIONS 1. Clean and dry excess water on chicken wings. 2. In a bowl, add chicken wings, black pepper, and fish sauce. If you don’t have fish sauce, you can just add salt to your liking. Mix well and set aside for 15 minutes. 3. Strain the chicken to remove excess fish sauce then fry your chicken wings until thoroughly cooked. 4. In a separate bowl, make the Honey Sriracha sauce by combining the sriracha, soy sauce, lime juice, honey, and pinch of salt. (For Keto alternative, use sugar-free maple syrup instead of Honey.)
